My first few attempts at Chevre came out very 'bucky'. My one doe who had been housed with a buck until she came here had very 'potent' milk until his smell wore off (I guess that's another reason not to keep bucks) Also if it's just the 'vinegar cheese' you were tasting (there's a real simple recipe using vinegar that doesn't use rennet) mine always comes out tasing a bit goaty no matter what I do to it so I went to a more complicated recipe that uses rennet and now I make an awesome cottage cheese! My soft cheese is like Berniece's very much like cream cheese a bit on the sweet side.
