As I was looking up photos for Pokeweed, I ran into some discussion about it being used as a decorative plant. I guess as long as your horse isn't eating it, he's doing okay. I didn't find any that were 8' tall so that would definitely be a bonus picture.

Your story kind of reminds me of a plant that grows at my grandfathers house in California called an Agave or Century Plant. It is typically a cactus and stays pretty low to the ground, but once in its life, it grows pretty tall. And when I mean pretty tall I'm talking well over 50 feet!

It was rather strange because I grew up for a number of years there at my grandparents and remember that plant (I used to get stuck with the sharp thorns as a careless kid).

Well, it was nearly 35 years later when one summer, the darn thing started growing skyward. I've never seen anything like it. Lasted well into the fall and then the stalk collapsed. Now there's hundreds of mini Agaves all around it. I need to ask my grandpa if it is still growing.
