We keep grass hay out all the time, and only give the girls their alfalfa (we use US Alfalfa that is dehydrated) after they have been milked, morning and evening, and only as much as they will clean up in about 1 hour, leaving much after that gets you less the next feeding. And I do agree with Jess on the butterfat having alot to do with the taste, of course having Nubians with their high butterfat is great, but some Saanen influenced LaMancha's we used to have had milk that simply wouldn't keep, it tasted fine first cooled but then became goaty very quickly, could never make cheese with it!
